Peanut Butter Pancakes with Bananas –
These fluffy pancakes are exquisite on a sunny or cloudy morning. Grab a large bowl and mix 1 ½ cups of flour, 2 tablespoons of baking powder, 1 tablespoon of white sugar and ½ teaspoon of salt and whisk. Grab another bowl and put in 1 ripe banana that’s mashed, 1 ¼ cups of milk, ⅓ of a cup of smooth peanut butter, 1 large egg, 1 tablespoon of canola oil and finally 1 teaspoon of vanilla extract and whisk until thoroughly mixed. Heat your griddle to medium heat and pour your batter in ¼ cup portions. Once tiny air bubbles form on the top which is about 2-5 minutes and then flip. Repeat for the same side and then remove it onto a plate and then do the same for the remaining batter. These pancakes are so fluffy and delicious. It’s a very easy recipe and is a must try.
Tini’s Mac N’ Cheese –
This TikTok viral recipe is perfect for those who love cheese. To make this first preheat the oven to 375 F and make sure you have a 9×13” casserole dish pan. Grate 16 ounces of colby jack, 8 ounces of sharp cheddar and 8 ounces of mozzarella cheese and mix it together. Boil your 16 ounces of elbow macaroni and in the meantime make the creamy cheese sauce. Grab a large skillet and put the stove on medium low heat. Melt some butter on the skillet and stir. Grab a small bowl and mix 1 teaspoon of smoked paprika, 1 teaspoon of salt, and half a teaspoon of pepper. Mix half of the seasoning in the sauce. Whisk in 3 tablespoons of flour for 2-3 minutes. Pour in 12 ounces of evaporated milk, 2 cups heavy cream and add the rest of the seasoning along with 1 tablespoon of dijon mustard. Whisk until smooth and put it into a low boil for it to thicken. Add half of your cheese in portions until it’s incorporated and melted in. Transfer half of your macaroni in the buttered casserole dish. Sprinkle a little less than half the cheese over the macaroni and then pour the rest of the macaroni on top. Sprinkle the rest of the cheese on top then put it into the oven for 30 minutes. Take it out of the oven and let it cool for 10 minutes. Now you have yourself a delectable meal.
Lemon Pound Cake –
I’ve personally made this recipe and believe me, it’s quite scrumptious. It has a nice mix of a hint of sour and softness. The top has icing that has a good crunch when you bite into it. The cake part is very light and how to make it is to first preheat your oven to 350 F and grease your 9×5 loaf pan. Grab a medium bowl to mix in 1 ½ cups of flour, 1 ½ tsp baking powder, 1 tbsp of lemon zest and ½ tsp salt. In a bowl of a stand mixer cream ½ cup of unsalted butter and 1 cup of granulated sugar for 4-6 minutes until pale and fluffy. In the stand mixer add 2 eggs one at a time and beat them. Also add in 1 tsp of vanilla extract and 2 tbsp of lemon juice, which is about half a lemon. Incorporate a third of your flour mixture then ¼ of buttermilk until combined. Repeat one more time then the rest of your flour mixture. Scrape the batter into the pan and then bake for 45-55 minutes. Let it cool for 15 minutes. Mix together ¼ cup of lemon juice which is about 1 lemon, and 3 tbsp of powdered sugar. Mix well and invert your loaf pan. Brush the cake with the lemon-sugar mixture and let it completely cool. When fully cooled, mix 1 cup powdered sugar (sifted), 1 ½ tbsp of lemon juice and 1 tbsp of milk. The icing should be thick, not runny. Pour over the cake carefully and let dry before serving. This is one of my favorite recipes to make and is absolutely deliciously moist and tangy.
