It is officially spooky season! This means pumpkin puree and other flavors are flying off of the shelves this month, leaves are falling, and the temperatures are dropping. This is the perfect time to enjoy a pumpkin loaf while watching your favorite scary film. Here’s a recipe for Grandma’s homemade pumpkin loaf!
Ingredients –
2 cups unsifted all purpose flour
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
2 cups sugar
¾ cup butter
2 eggs
1 can pumpkin puree
Instructions –
Combine flour, salt, baking powder, baking soda, and spices in a large bowl. Whisk well and set aside.
In another large bowl, combine the butter and sugar. Beat with a hand mixer until well combined, it should look crumbly.
Add the eggs one at a time, beating well after each addition.
Continue beating the mixture until light and fluffy.
Add the pumpkin puree to the butter, sugar, and egg mixture. Beat until well combined, it may look a little grainy which is okay.
Add the dry ingredients to the pumpkin mixture. Beat on low until well combined.
Add the desired amount of chocolate chips to the batter, this is optional!
Transfer the batter to two greased 9×3 loaf pans. Bake for 65-75 minutes at 350 degrees. Bake until a cake tester comes out clean.
Let the loaves cool on a wire rack for ten minutes. Enjoy!
